Raspberry slices🍓 – A treat for everyone!
Are raspberries your favorite fruit? Then you'll love our raspberry slices! The intense flavor of fresh raspberries combined with the sweet dough and crispy macaroons - a dream for all raspberry fans.
Ingredients for the dough:
- 250 g soft butter
- 250 g sugar
- 1 packet of vanilla sugar
- 7 egg yolks
- 500 g flour
For the filling:
- raspberry jam
For the macaroon layer:
- 3 egg whites
- 200 g powdered sugar
- 200 g ground almonds or hazelnuts
Here's how to make the perfect raspberry slices:
Prepare the dough:
Beat the butter with a hand mixer until it is nice and creamy. Add the sugar, vanilla sugar and egg yolks little by little and mix everything well. Then add the flour and knead everything into a smooth dough. Wrap the dough in cling film and put it in the fridge for at least 30 minutes.
Roll out the dough:
Preheat the oven to 180 °C (top/bottom heat). Roll out the chilled dough on a lightly floured work surface to about 0.5 cm thick. Then place it on a greased baking tray and spread a generous layer of raspberry jam over it.
Prepare the macaroon layer:
Beat the egg whites with a hand mixer until stiff. While beating, slowly add the icing sugar until the mixture is shiny. Finally, carefully fold in the ground almonds or hazelnuts.
Layer and bake:
Spread the macaroon mixture evenly over the jam layer. Bake the raspberry slices in the preheated oven for about 10-15 minutes until the surface is lightly golden brown.
Cut and enjoy:
After baking, let the cake cool down and then cut it into small, rectangular pieces. Now you can serve your homemade raspberry slices - perfect with coffee, tea or just like that!
